New Mexico Chile


Our Dear Friend Celine has come through for us once again. With a visit from a nephew, she seized the opportunity to send us some green chiles. For those of you that have never visited and dined in New Mexico, you are probably saying, so what? Well, New Mexico Chile is very much like a drug. Once you have some you have to have more. It is grown primarily in Hatch, New Mexico. When picked in the fall it is then roasted over an open flame, taken home in soggy 50 pound trash bags and then you peel the skin off, chop it up, (wearing gloves to do this) and then it is packaged in zip-lock freezer bags and frozen for when you need it. The chiles range from mild to hot and hot does mean hot with a taste of smoke in there somewhere as well, and there is red as well as green. You can get some from this company or just go to New Mexico and visit the El Pinto restaurant and you can order some from them also.
