All: Mer gave us a cook book that is now over ten years old, but it is quite good. I made pork chops with lemon butter that Rhonda and I both thought was great. You need: 1 tsp. vegetable oil, 4 thin cut bone-in pork chops, salt and freshly ground pepper, 1 tablespoon of butter, 1 garlic clove minced, 2 tablespoons of drained capers, 1 tablespoon of fresh lemon juice, and I tablespoon of chopped chives (which I did not have), Heat the oil in a large non-stick skillet and season the pork chops with the salt and pepper. Cook over high heat for three or four minutes until browned. Turn, sear for two more minutes. Transfer to a plate. Add the butter and garlic to the skillet and stir over moderate heat, about 1 minute. Stir in the capers and the lemon juice and chives. Spoon the sauce over the pork chops. We added German potatoes and a salad for a really good meal. And it only took a total of fifteen minutes. Enjoy!
